Ingredients for 1 servings:

  • 3 kg plums
  • 600 g gelling sugar, 3:1 or 2:1
  • 1 tbsp, sautéed cinnamon
  • 1 tsp, leveled allspice powder

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 45 minutes

Wash and pit the plums, then mince or puree them. Mix with the sugar and spices and pour into a roasting pan or similar container. The roasting pan must be grease-free. Cook at 175°C (350°F) on the second shelf from the bottom for 1.5 to 2 hours without stirring, then pour into jars while still hot. Tip: Stir whenever a skin forms; this reduces moisture loss.
