Apple and sage jelly

Ingredients for 1 servings:

  • ¾ liter cloudy apple juice
  • 2 handfuls of sage leaves
  • 1 packet of gelling sugar (2:1)
  • 1 lemon(s), the juice

Instructions

Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Bring the apple juice to a boil in a saucepan. Meanwhile, chop the sage leaves into small pieces and add them to the boiling apple juice. Remove the pan from the heat and let it rest for 15 minutes. Strain everything through a sieve. Add the lemon juice and preserving sugar, bring to a boil, and simmer for 4 minutes. Please also follow the instructions on the preserving sugar package. Pour the jelly into jars and cover for about 10 minutes. Since sage is said to have many beneficial healing and preventative properties, it’s one of my favorite jellies.
