Ingredients for 6 servings:

  • 100 g soy granules, prepared according to package instructions
  • 3 tbsp olive oil
  • 1 onion(s), in small cubes
  • 3 cloves garlic, finely chopped
  • 750 g soup vegetables (carrots, celery, parsley root, leek), in small cubes
  • 3 tbsp tomato paste
  • 3 cans of chopped tomatoes, 400 g each
  • Thyme
  • chili powder
  • salt and pepper
  • 1 bay leaf

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Sauté the onions and garlic in hot olive oil until translucent. Add the soup vegetables and roast for a few minutes. Then stir in the tomato paste and fry briefly. Stir in the soy granules. Add the thyme, chili, salt, pepper, and bay leaf, and deglaze with the canned tomatoes. Simmer for about 30 minutes and season to taste.
