Garlic oil sauce for spaghetti

Ingredients for 4 servings:

  • 4 cloves garlic
  • 6 tbsp oil (olive oil, first-class)
  • 1 bunch of parsley
  • salt and pepper
  • 500 g pasta (spaghetti)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the garlic and finely slice. Pick the parsley leaves and cut them into fine strips. Cook the spaghetti in plenty of salted water until al dente. Meanwhile, heat 3 tablespoons of olive oil and roast the garlic until golden. Deglaze with half a ladle of the pasta water and reduce to a creamy sauce. Drain the pasta, let it drain, and toss it in the sauce. Mix with the remaining olive oil and the parsley leaves, season sparingly with salt and plenty of pepper. Let it stand for another 1-2 minutes, stirring well a few times.
