Ingredients for 4 servings:
- ½ tbsp flour
- 3 tbsp water
- 1 tsp vinegar
- 1 tsp lemon juice
- 5 egg yolks
- 1 tsp salt
- 1 pinch(s) of pepper
- 90 g butter
- ½ liter meat broth, or fish broth, or vegetable broth
Instructions

The flour is mixed with a little water. Add vinegar, lemon juice, egg yolk, salt, pepper, and meat/fish stock/vegetable stock. Then, cut the butter into small pieces, heat the liquid, and whisk. Gradually add the butter pieces until the sauce boils. Serve immediately.
