Spaghetti with tomato and mozzarella sauce

Ingredients for 2 servings:

  • 1 can of tomatoes, slices, but also pizza tomatoes
  • 1 cup of cream
  • 1 mozzarella
  • Basil, dry or fresh
  • salt and pepper
  • e.g. balsamic vinegar
  • 2 servings of pasta (spaghetti)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti. Meanwhile, cut the mozzarella into small cubes. Place the cream and tomatoes in a shallow, large saucepan; this prevents the mozzarella from sticking together. Heat gently. Gradually add the mozzarella, stirring gently. When the sauce is hot (but not boiling), season with salt and pepper. I also add a dash of dark balsamic vinegar, but be careful, too much makes the sauce too acidic. Now add fresh or dried basil. Transfer the cooked spaghetti to the plates and pour the sauce over it.
