BBQ spare ribs and chicken wings

Ingredients for 4 servings:

  • 1 kg ribs (spare ribs, pork)
  • 1 kg chicken wings
  • 50 ml soy sauce, sweet
  • 40 ml soy sauce
  • 200 ml honey, liquid
  • ½ bulb(s) garlic
  • 8 tsp Tabasco
  • 1 tbsp star anise, ground
  • 1 tbsp cinnamon
  • 30 g fresh ginger
  • 200 ml tomato(s), strained
  • 2 tbsp curry powder, preferably green
  • 3 tbsp vinegar
  • 2 tbsp paprika powder, smoky or smoked salt (only if not grilled, but roasted in the oven)

Peel the garlic and ginger and dice both finely. Mix the soy sauce, tomato puree, honey, vinegar, and all the spices in a bowl with the garlic and ginger and let it sit for a while. Marinate the meat in it. Tip: If you have enough time, let both types of meat marinate in the sauce in a bag in the refrigerator for 5 hours. Oven-baked version: Place the spare ribs and chicken pieces in a suitable baking dish. Pour the sauce completely over the chicken pieces. Then brush the sauce onto the skin. Place the dish in a preheated oven at 170°C for one hour. Open the oven from time to time and brush the skin again with the sauce. Make sure the skin doesn’t get too brown. Turn the meat over once or twice. Grilled version: After marinating, place the pieces of meat on the grill. Keep moving and brush with the sauce every now and then. This goes best with white bread (you can also dip the sauce in it) and cold beer or white wine.
