Pork fillet in a herb and garlic coating

Ingredients for 2 servings:

  • 350 g pork fillet(s) (in one piece)
  • 2 garlic cloves
  • 1 tsp oil (e.g. olive oil)
  • salt and pepper
  • Herbs (fresh, dried or frozen – e.g. rosemary, thyme, oregano)

Preheat oven to 150°C. Peel and finely dice the garlic, chop or finely grind the herbs if desired. Wash the pork fillet and pat dry. Heat oil in a pan and brown the pork fillet all over. Spread a double layer of aluminum foil (large enough to wrap the piece of meat) on the work surface. Spread half of the chopped garlic in the center, slightly larger than the piece of meat. Add salt, pepper, and herbs to the garlic, and place the seared piece of meat on top. Spread the other half of the garlic on top, season with salt and pepper, and sprinkle with herbs. Wrap the meat tightly in the aluminum foil and place in the oven. Reduce oven temperature to approximately 130°C and cook the meat for a further 15-20 minutes. This goes well with asparagus risotto, for example.
