Ingredients for 4 servings:
- 500 g pork schnitzel, alternatively poultry
- 100 g Parmesan
- 3 eggs
- 4 tbsp flour
- Salt
- pepper
- olive oil

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes
Schnitzel with Parmesan breading
Halve or third the schnitzels depending on their size and season with salt and pepper. Pour the flour onto a shallow plate and coat each schnitzel in it, one at a time, shaking off any excess. Finely grate the Parmesan cheese. Beat the eggs and fold in the Parmesan cheese, seasoning with salt and pepper. Dip the schnitzels in the cheese and egg mixture and fry over medium heat until golden brown on both sides.
