African Peanut Soup

Ingredients for 4 servings:

  • 1 tbsp butter
  • 1 onion(s), chopped
  • 1 large tomato(s), diced
  • 1 tbsp flour
  • ½ liter chicken broth (preferably freshly cooked)
  • 1 cup peanuts, finely chopped, unsalted
  • 2 cups milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

from Nigeria

Chop the peanuts and mix them with the milk, then set aside. Melt the butter in a saucepan and sauté the chopped onion and diced tomatoes. Stir in the flour and let it sweat briefly. Add the broth while stirring, and let it simmer for 5 minutes. Stir in the peanuts and milk and let it simmer with the lid on for 20 minutes.
