Ingredients for 1 servings:

  • 2 large egg whites
  • 175 g sugar
  • 200 g almonds, unpeeled, ground
  • 1 pinch(s) cinnamon powder
  • 5 drops of bitter almond flavor
  • 3 tbsp powdered sugar, optionally flavored caster sugar

Christmas cookies without flour

Place the egg whites in a mixing bowl and beat with the whisk of a hand mixer until stiff peaks form, gradually adding the sugar. Mix the ground almonds with the cinnamon and bitter almond flavoring and fold in. Preheat the oven to 160°C (140°C fan oven). Fill a piping bag with the mixture and pipe small heaps onto a baking sheet lined with baking paper. Bake in the preheated oven for about 20 minutes, then remove and let cool completely on a wire rack. Dust the almond kisses thickly with powdered sugar. This amount will make about 75 cookies, depending on the size of the cookies.
