Ingredients for 1 servings:

  • 170 g butter (Kerrygold)
  • 175 g dark chocolate
  • 94 g flour
  • 30 g cocoa powder
  • 50 g white chocolate
  • 50 g milk chocolate
  • 3 eggs
  • 250 g sugar, white

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Lots of chocolate. More than you could wish for.

Cut the butter into pieces and place it in a medium-sized (porcelain) bowl. Break the dark chocolate into small pieces and add it to the bowl. Fill a saucepan with water and place the bowl on top. (Make sure the bowl is not touching the water.) Stir the butter and chocolate in the bowl over a double boiler until completely melted. Let the melted mixture cool to room temperature. Sift the flour and cocoa powder into a medium bowl (very important; we don’t want any lumps!!). Cut the white and milk chocolate into small pieces. Line a shallow 27 x 26 cm baking pan with aluminum foil. Beat the eggs and sugar with a hand mixer for 3-8 minutes. Beat until the batter is very light and has doubled in size. Preheat the oven to 170°C (350°F). Pour the cooled chocolate-butter mixture over the egg-sugar mixture. Carefully fold in the chocolate mixture with a rubber spatula until the batter is dark brown. Fold in the chocolate gently and slowly so the egg mixture doesn’t collapse. Sift the flour and cocoa powder mixture onto the batter. Gently stir the batter with a rubber spatula until it looks fudgy; don’t overmix! Fold in the white chocolate and milk chocolate pieces. Bake the brownies for 40 minutes. If they aren’t cooked by then, cover the pan with aluminum foil and then continue baking. Be sure to enjoy the brownies with vanilla ice cream!
