Ingredients for 4 servings:

  • 250 g flour
  • 2 tbsp brown sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 3 eggs, separated
  • 375 ml milk
  • 4 tbsp butter, melted
  • 1 tsp vanilla extract
  • n. B. Maple syrup, to serve
  • n. B. Butter, for serving
  • n. B. Berries, fresh, to serve

Waffles

Preheat the waffle iron and grease if necessary. Combine the flour, sugar, baking powder, and salt in a bowl and set aside. In another bowl, combine the egg yolks with the milk, vanilla extract, and butter. Then add the flour mixture and beat until smooth. Beat the egg whites until stiff peaks form and fold into the batter. Pour 125 ml of batter onto each of the bottom halves of the waffle iron and spread evenly. Close the iron and cook the waffle for about 2 minutes until golden brown. Serve the waffles warm with butter, maple syrup, and fresh berries.
