Angy's Mediterranean – Relish

Ingredients for 1 servings:

  • 1 eggplant(s)
  • 2 bell peppers
  • 1 large cucumber(s)
  • 3 large onions
  • 6 cloves garlic
  • 2 tbsp oil
  • 125 ml white wine
  • 100 ml tomato sauce
  • 50 ml ketchup or tomato paste
  • 6 tbsp apple cider vinegar
  • ¼ tsp pepper
  • 5 sprigs rosemary, fresh
  • 2 tsp herbs, Italian
  • 150 g sugar, brown (or raw cane)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

approx. 4 glasses of 200 ml each

Wash, clean, and finely dice all the vegetables. Heat the oil in a pan and sauté the onions and garlic. Add the rosemary and continue to simmer until it starts to smell really good. Then add the remaining vegetables to the pan and simmer for about 5 minutes, stirring. Deglaze with white wine, tomato ketchup and tomato puree, and vinegar, and add the remaining spices. Simmer for about 10 minutes, stirring, until it thickens slightly. Season again to taste. Remove the rosemary sprigs and, while still hot, fill small twist-off jars. Seal immediately, turn over, and only set aside again once it has cooled. Delicious with all types of meat, especially grilled meats and on baguette or flatbread!
