Ingredients for 4 servings:

  • 200 g bread(s), stale
  • 400 ml milk (or more, depending on how dry the bread is)
  • 180 g cheese (Appenzeller), mature
  • 4 eggs
  • some pepper
  • some nutmeg
  • some parsley, finely chopped
  • some butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly tear/break the bread and place it in a bowl. Heat the milk in a saucepan or in the microwave, pour it over the bread, and let it stand for 15 minutes or longer. In the meantime, preheat the oven to 220°C and lightly grease a suitable baking dish. Tear the soaked bread pieces into pieces with a fork. Grate the cheese, separate the eggs, and add the egg yolks and cheese to the bread mixture. Add the pepper, nutmeg, and parsley and mix well. Beat the egg whites until stiff peaks form and fold them into the mixture. Pour the mixture into the dish and bake in the center of the oven for 30-40 minutes.
