Apple and speculatius dessert

Ingredients for 10 servings:

  • 500 g low-fat curd cheese
  • 500 g mascarpone
  • 400 g cream
  • 1 pack of cream stiffener
  • 1 vanilla pod(s), including the pulp
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 4 large apples
  • n. B. water
  • 1 tbsp sugar
  • 1 packet of Bourbon vanilla sugar
  • e.g. cinnamon
  • 30 spiced speculatius cookies
  • Chocolate decoration (figures)

Working time approx. 1 hour; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 30 minutes

Christmas dessert without alcohol, without coffee

For the cream, whip the cream with the cream stiffener until stiff. Split open the vanilla pod and scrape out the seeds. Mix the low-fat quark and mascarpone with the seeds of the vanilla pod, sugar, and vanilla sugar. Stir in the whipped cream. For the apple mixture, peel and finely dice the apples. Place them in a saucepan with a little water, sugar, bourbon vanilla sugar, and cinnamon. Boil until there is no liquid left and the mixture resembles a chunky mush. Let cool slightly. In the meantime, place the speculatius biscuits in a freezer bag, seal it, and crush the contents using a rolling pin or similar tool. Fill the glasses with about 2 tablespoons of the cream and smooth it down. Add a layer of apple mixture. Cover again with 1-2 tablespoons of cream. Finally, fill with about 3 cm of speculatius biscuit crumbs. Divide the remaining cream between all the glasses and smooth it down again. Place one chocolate decoration figure into each glass. Divide the remaining speculatius crumbs among the glasses. Feel free to vary this recipe if you like. You can use berries instead of the apple mixture, add more vanilla (depending on your taste), or even decorate with chocolate sprinkles.
