Ingredients for 8 servings:

  • 1 kg apples
  • 100 g butter
  • 200 g sugar
  • 2 tbsp vanilla sugar
  • 1 lemon(s), grated peel
  • ½ tsp cinnamon
  • 100 g almond flakes
  • 400 ml cream
  • 4 eggs, separated
  • 20 pieces of rusk

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Toast the almonds in a dry pan over moderate heat. Peel, core, and eighth the apples, then fry in hot butter. Add the sugar, vanilla sugar, cinnamon, and lemon zest. Beat the egg yolks with the cream until frothy. Beat the egg whites until stiff peaks and fold in. Dip the rusks into the cream, then arrange half of them in a baking dish as the base. Mix three-quarters of the cream with the apples and almonds and spread it over the rusk base. Place the second layer of rusks on top and top with the remaining cream. Bake in a preheated oven at 180°C for about 30 minutes.
