Apple cinnamon muffins

Ingredients for 1 servings:

  • 2 m.-sized apples
  • 140 g flour
  • 120 g wholemeal flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp cinnamon
  • 1 sachet of vanilla sugar
  • 1 egg(s)
  • 150 g brown sugar
  • 100 ml oil, neutral
  • 300 g buttermilk
  • powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for 12 pieces

Preheat oven to 180°C (top/bottom heat). Cut apples into small pieces. Sift flour into a bowl and mix with wholemeal flour, baking powder, baking soda, cinnamon, vanilla sugar, and apple pieces. In another bowl, lightly beat the egg. Then add sugar, oil, and buttermilk and mix well. Add the flour mixture and fold in very carefully. Place 12 paper muffin cases into the holes in the baking tray and fill with batter. Bake in the hot oven for approx. 20-25 minutes, then let rest in the tray for another 5 minutes. Carefully remove from the tray.
