Apple compote with yogurt

Ingredients for 4 servings:

  • 1 kg apples, sour
  • 4 tbsp lemon juice
  • 4 tbsp butter
  • 4 tbsp sugar
  • 200 ml apple juice
  • 6 tbsp almond flakes
  • 150 g sour cream or crème fraîche
  • 250 g yogurt
  • 2 packets of vanilla sugar
  • Powdered sugar for dusting

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel, quarter, and core the apples. Cut into cubes and drizzle with lemon juice. Heat the butter and briefly fry the apples. Sprinkle with sugar and deglaze with the apple juice. Cover and simmer for 5-8 minutes, then let cool. Toast the flaked almonds in a dry pan and remove immediately, otherwise they will turn black. Mix the sour cream or crème fraîche with the yogurt and vanilla sugar. Layer the compote and cream in dessert bowls and sprinkle with the flaked almonds. Dust with powdered sugar.
