Apple lentils with smoked pork

Ingredients for 4 servings:

  • 500 g dumpling dough
  • 600 g smoked pork
  • 150 g lentils, red
  • 300 ml vegetable stock
  • 1 onion(s), white
  • 1 apple (Elstar)
  • 2 tbsp acacia honey
  • 2 tbsp butter
  • 2 tsp curry powder
  • some salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Rinse the smoked pork, pat dry, and cut into 4 steaks. Peel and finely dice the onion. Shape the dumpling dough into smaller dumplings. Wash the apple, quarter it, remove the core, and cut it into smaller cubes. Bring salted water to a boil in a pot for the dumplings, then simmer over low heat for about 10 minutes until cooked through. Melt 1 tablespoon of butter in a pan and fry the smoked pork steaks over medium heat. Finally, drizzle the honey over the steaks. Melt 1 tablespoon of butter in a pot and sauté the onion until translucent. Add the curry powder and fry briefly, deglaze with the stock, add the lentils, bring to a boil, and cook the lentils over medium heat according to the package instructions. 2 minutes before the end of the lentils’ cooking time, add the apple to the pot and simmer briefly. Season to taste with salt and pepper. Arrange the lentil vegetables and steaks on plates, drain the dumplings and serve with them.
