Apple Pancakes with Bacon

Ingredients
 

  • 375 ml Buttermilk
  • 5 piece Eggs (M)
  • 225 g Wheat flour type 405
  • 3 piece Apples, small
  • 12 Discs Bacon slices
  • Salt and pepper
  • 6 tsp Oil

Instructions
 

  • Whisk the eggs with milk, sieve the flour over them and stir everything into a smooth dough. Season with salt and pepper and leave to soak for about 20-30 minutes.
  • Wash, quarter and core the apples and cut into 4 wedges each. Set aside, covered. Heat 1 teaspoon of oil in a pan and put 8 apple wedges in a circle in the pan. Pour 1/6 of the batter over it. Let the bottom set over medium heat, then turn the pancake and finish baking. Keep warm and bake the remaining dough and apple wedges into 5 more pancakes.
  • Leave the bacon slices in another pan one after the other until crispy. Arrange a pancake with 2 slices of bacon on each plate.
