Apple-quince compote

Ingredients for 3 servings:

  • 600 g apples, aromatic, prepared weighed
  • 2 thick quinces
  • 1 tbsp lemon juice
  • some water, approx. small coffee cup
  • Honey or raw cane sugar
  • ½ cup whipped cream
  • Honey (rose honey) or rose sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash the fruit and remove the skin from the quince, i.e., grate it. Cut the apples and quinces, including the skin, into small pieces and toss with the lemon juice. Simmer gently, covered, in about a coffee cup of water. Condensation will form; be careful when adding the fruit. The fruit should not be floating in the water at the end of the cooking time. Allow the compote to cool. Sweeten to taste and serve with whipped cream. Rose honey or rose sugar tastes delicious with it. You can set aside 2-3 tablespoons of compote in the refrigerator for muesli the next day. The cooking time varies depending on the size of the fruit.
