Smoked pork with onions and apple rings

Ingredients for 4 servings:

  • 3 m.-sized onion(s)
  • 2 large apples (preferably Boskop)
  • 4 slice(s) Kasseler, boned
  • 100 ml broth, clear
  • 100 ml applesauce
  • 100 ml cream
  • 1 tbsp marjoram, fresh
  • Salt
  • pepper, black
  • Clarified butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, slice the onions into thin rings. Peel the apples, core them, and slice them. Season the smoked pork slices with pepper and lightly fry them on both sides in heated clarified butter. Remove from the pan and keep warm. Sauté the onion rings in the frying fat and add the apple slices. After 2 to 3 minutes, add the broth, applesauce, and cream. Bring to a gentle boil and then add the smoked pork slices back in. Finally, season with plenty of marjoram and a little salt and pepper. As a side dish, we serve mashed potatoes or croquettes and lamb’s lettuce with walnut oil and raspberry vinegar. This recipe is great for entertaining and is easy to prepare. It can be kept warm in the oven for several hours and will gain in flavor.
