Wash, quarter, and core the apples. Cut them into small cubes and place them in a bowl. Add the sugar, cinnamon, lemon juice, applesauce, quark, and raisins and mix well. Season to taste and adjust seasoning if necessary. Preheat the oven to 200°C (top/bottom heat). Line a baking sheet with parchment paper or grease it. Place the puff pastry sheets next to each other on the countertop. If you have a rolling pin, unroll it and place it on a floured surface. (If necessary, lightly press it again with a rolling pin.) Cut the puff pastry sheets in half crosswise to create 10cm squares. (They must be squares, otherwise it won’t work as well.) Place 1-2 tablespoons of the filling in the center of the puff pastry squares and brush the edges with a little water; egg also works. Then fold the squares into a triangle. Press the edges together firmly, ideally with a fork. Now place the apple wedges on the baking sheet and bake in the oven for about 20-25 minutes, or a little longer, until golden brown. Let cool on a wire rack and sprinkle with powdered sugar.
