Apple yeast pancakes

Ingredients for 4 servings:

  • 250 g flour
  • 100 ml milk
  • 30 g butter
  • 2 eggs
  • 20 g yeast (fresh)
  • 70 g sugar
  • 1 packet of vanilla sugar
  • 1 dashes lemon juice
  • 1 apple
  • e.g. crème fraîche
  • n. B. plum jam

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Yeast pancakes (Struwen) as we love them

Heat the milk and butter in a saucepan until lukewarm. Put the flour, eggs, both sugars, and lemon juice in a bowl. Make a well in the flour with a spoon and pour in the warm (butter)milk. Crumble in the yeast and mix everything into a smooth dough. Finally, coarsely grate the apple and add it to the dough. Cover and leave to rise in a warm place for about 30 minutes. Fry a tablespoon at a time in a greased pan on both sides. Serve sprinkled with powdered sugar. I serve with sweetened crème fraîche and plum jam. The cakes are very filling. They also taste great cold, e.g. as a snack for school/work. If you don’t like it too sweet, or want to serve the cakes with vanilla sauce, for example, you can reduce the amount of sugar. For us, however, it’s just right as it is.
