Ingredients for 1 servings:

  • 150 g apricot(s), dried (soft)
  • 80 g ground almonds
  • 2 tbsp honey
  • 1 large orange(s), untreated
  • ½ vanilla pod(s), halved lengthwise

Grate the zest from the well-washed orange. Then squeeze out the juice. Cut the apricots into small pieces, mix with the orange juice, the two vanilla bean pieces (do not scrape), and the zest. Cover and let soak overnight. The next morning, remove the vanilla pods, add the almonds and honey, and blend everything with a hand blender until smooth. Transfer to a screw-top jar and store in the refrigerator. This makes approximately one 350g jar.
