Apricot and lavender jam

Ingredients for 1 servings:

  • 900 g apricot(s), pitted
  • 300 g honey
  • 400 g gelling sugar 3:1 or simple sugar plus the appropriate amount of pectin
  • 3 tbsp lavender flowers, dried

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 3 minutes; Total time approx. 3 hours 33 minutes

Cut the apricots into small pieces, add the honey and gelling sugar, and mix. Place the lavender blossoms in a cheesecloth bag and add them as well. Let it steep for a few hours (about 3 hours). Then bring the mixture to a boil and simmer for 3 minutes. Remove the lavender bags, pour the jam into prepared jars while still hot, and seal immediately.
