Apricot chutney

Ingredients for 6 servings:

  • 1,000 g apricot(s)
  • 250 g onion(s)
  • 2 chili peppers, red
  • 400 g sugar
  • 1 tsp salt
  • 200 ml vinegar (white wine vinegar)
  • 2 apricot stones

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pit the apricots and chop finely, crack open two stones, and crush the seeds in a mortar. Dice the onions, remove the seeds from the chili peppers under running water and slice them finely. If you like it spicy, you can keep a few seeds. Place all ingredients in a saucepan and simmer uncovered over medium heat for about 1 hour, stirring occasionally, until thickened. Pour the finished chutney into sterilized jars while still hot and seal immediately. Turn the jars upside down for a while. Store in a dark place, if possible; it will keep for 1 year. Makes 4-6 jars, depending on the size.
