Ingredients for 6 servings:

  • 2 kg apricot(s), pitted
  • 1 kg gelling sugar, 2 : 1

Instructions

Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 15 minutes

Pit and quarter the apricots (or cut them into even smaller pieces if you prefer), then place them in a large pot and sprinkle with sugar. Bring the mixture to a boil, stirring constantly. Purée with a hand blender until no more apricot skin is visible. Bring the mixture to a boil for a short time (about 2 minutes), then transfer to empty, clean jars and seal immediately. This is the easiest, quickest, and, in my opinion, tastiest jam! Have fun trying it! This amount makes about 6-8 jars of jam (depending on size).
