Ingredients for 2 servings:
- 400 g apricot(s), dried
- 1 liter apricot juice
- 3 packets of vanilla sugar
- 250 g quark
- 2 egg yolks
- 25 g butter, soft
- 80 g breadcrumbs
- 1 egg white
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Halve the apricots, cover, and cook in the juice for 10-15 minutes, then puree. Season with vanilla sugar. If the soup is too thick, add more juice. Beat the butter and egg yolks until fluffy. Add the quark and breadcrumbs. Beat the egg whites until stiff and fold in. Scoop dumplings from the mixture and let them simmer in lightly salted water for about 10 minutes. Add the finished dumplings to the apricot soup and serve.
