Apricots in Aperol

Ingredients for 4 servings:

  • 400 g apricot(s), fresh, not too ripe
  • 100 g sugar
  • 100 ml Aperol

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 25 minutes

delicious addition to ice cream or mousse, but also to chocolate cakes

Wash and pit the apricots, and cut them into quarters or eighths, depending on their size. Caramelize the sugar in a saucepan, deglaze with Aperol, and stir. Once the caramel has dissolved, add the apricots, bring to a boil briefly, then remove the pan from the heat and let it cool, covered.
