Arroz de Tomate com Bananas Gratinados

Ingredients for 4 servings:

  • 8 bananas
  • 8 slice(s) ham, cooked
  • 200 ml cream or milk
  • 100 ml white wine
  • 100 g cheese, grated
  • Mustard
  • curry
  • Paprika powder, sweet
  • Butter or olive oil
  • 1 garlic clove(s), finely chopped
  • 2 tomatoes, peeled, pitted and finely chopped
  • 2 cups rice
  • 4 cups water
  • 2 tbsp parsley, chopped

Tomato rice with banana gratin

Spread mustard on one side of the ham slices, dust with curry powder, and wrap peeled bananas in it. Layer the bananas in a buttered gratin dish, pour over cream or milk and white wine, and sprinkle with the cheese. Sprinkle with paprika. Bake in a preheated oven for about 20-30 minutes until nicely browned. In a pan, sauté the garlic and onion in fat until translucent, stir in the tomatoes, and cook for about 5 minutes. Add the rice and water, bring to a boil. Cover and simmer over low heat until tender and all the liquid has been absorbed. Stir in parsley, salt, and pepper to taste. Serve the rice and banana gratin together.
