Asian grilled chicken – chicken thighs with Asian marinade

Ingredients for 2 servings:

  • 1 garlic clove(s), chopped
  • 1 red chili pepper(s), chopped
  • ¾ tsp black peppercorns (or to taste)
  • ¾ tsp salt
  • 1 ½ tsp sugar
  • 1 ½ tsp turmeric powder
  • 1 ½ tsp paprika powder
  • ¾ tsp curry powder
  • 2 ½ tbsp oil
  • 2 chicken thighs, boneless
  • 50 ml coconut milk

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 30 minutes

Grind the chopped garlic clove and chili pepper together with the peppercorns in a mortar and pestle, then mix with the salt, sugar, turmeric, paprika, curry powder, and oil to form a paste. Spread the paste over the meat, rub it in, and let it marinate, ideally overnight in the refrigerator. While grilling, brush both sides of the meat with the coconut milk and grill until the meat is cooked through but still juicy, and the skin (if present) is nice and crispy. Sweet chili sauce, for example, goes perfectly with the sauce.
