Ingredients for 4 servings:

  • 320 g Flour, double-grip (Vienna Grießler)
  • 3 tbsp olive oil
  • 1 pinch of salt
  • 21 g yeast, fresh
  • 150 ml water, lukewarm
  • 500 g pork fillet(s)
  • 200 g cheese (mild pizza cheese), grated
  • 2 bell peppers, red and yellow
  • 2 chili peppers
  • 1 onion(s)
  • 2 cloves garlic
  • 20 g fresh ginger
  • 8 tbsp soy sauce
  • 4 tbsp soy sauce, sweet
  • 4 tbsp fish sauce
  • 100 ml chili sauce (sweet chili sauce)
  • possibly sambal oelek
  • n. B. Bamboo shoot(s), fresh

the best of two worlds

First, prepare the dough, as it still needs to rest. To do this, put the flour in a bowl and add a pinch of salt. Then stir in the olive oil. Dissolve the yeast completely in the lukewarm water and then add it to the flour. First mix everything together and then knead well until a smooth dough forms. Cover the bowl and let it rest in a warm place (at least 30 minutes, but can be longer). Meanwhile, wash the pork fillet, pat dry, and thinly slice. Deseed the bell peppers and chilies, remove the white membranes, and slice into strips. Peel and finely dice the onion, garlic, and ginger. Mix together the two soy sauces and the fish sauce. Next, sear the pork fillet in a pan until very hot and then deglaze with the sauce mixture. Cook until most of the liquid has evaporated (about 1 minute) and the meat is well coated with the sauce (be careful not to let it burn; reduce the heat if necessary). Sear the bell pepper strips. Then add the chilies, onion, garlic, and ginger and continue to fry briefly. Deglaze with the sweet chili sauce and continue to cook (about 1.5 minutes) until most of the liquid has evaporated (season with sambal oelek to taste). Since there are enough ingredients for two baking trays, divide the dough and all the ingredients into two halves. Roll out each half of the dough onto a separate baking tray. Next, spread the bell pepper mixture over the dough. Place the meat on top. Sprinkle the pizza with fresh bamboo shoots and grated cheese. Bake in a preheated oven at 250°C for about 10 minutes. Tip: For best results, bake the pizzas individually using top/bottom heat. If you want to bake both pizzas at once, you’ll need to use fan-assisted oven.
