Avocado-banana-chocolate mousse with marinated fruit

Ingredients for 2 servings:

  • 1 avocado(s)
  • 1 banana(s), ripe
  • 3 tbsp coconut milk
  • 100 g dark chocolate
  • 2 tbsp rice syrup
  • 3 tbsp cocoa powder
  • 1 pinch of vanilla
  • 1 tbsp cocoa nibs
  • 50 g fruit of your choice
  • 1 tbsp rice syrup
  • 1 tbsp lime juice
  • 2 tbsp brown rum
  • some coconut blossom sugar
  • some chili flakes
  • some walnut kernels, chopped, or almond slivers

with fruit of your choice

Peel the banana and cut into pieces. Halve the avocado, remove the pit, and scoop out the flesh. Purée the banana, avocado, and coconut milk with a hand blender until smooth. Slowly melt the dark chocolate in a saucepan over a pan of simmering water. Then, using a blender, combine it with the cocoa powder, cocoa nibs, vanilla, rice syrup, and banana-avocado puree to form a mousse. Peel the fruit and cut into small cubes. Mix with the rum, rice syrup, lime juice, coconut blossom sugar, and chili flakes, and let it sit for a while. Serve the mousse in bowls and garnish with the marinated fruit. Finally, top with a few chopped walnuts or almond slivers.
