Baileys mousse with blueberries

Ingredients for 6 servings:

  • ½ liter oat milk (oat drink)
  • 1 pack of chocolate pudding powder
  • 500 g soy yogurt (yogurt alternative) blueberry
  • 50 g dark chocolate
  • 2 tbsp sugar
  • 200 ml whipped cream, universal, e.g. from Schlagfix
  • 1 packet of vanilla sugar
  • 6 chocolate cookies
  • Baileys Irish Cream to taste
  • some chia seeds
  • 200 g blueberries

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

without egg

Cook the pudding mix with oat milk and sugar according to the package instructions. Stir in Baileys (amount to taste) and dark chocolate. Let the pudding cool slightly. Stir in the soy yogurt. Whip the whipped cream until stiff peaks form, then stir in the vanilla sugar. When the pudding has cooled completely, fold in the whipped cream. Crumble a chocolate biscuit into each of six small bowls and top with a handful of blueberries. Then pour in the mousse. Garnish with blueberries and chia seeds, then refrigerate for an hour.
