Ingredients for 6 servings:
- 6 apples, e.g. Elstar or Boskoop, 200 g each
- 2 tbsp almonds, chopped
- 30 g butter
- 2 tbsp almond flakes
- 2 tbsp powdered sugar
- 150 g marzipan paste
- 3 tbsp cranberries
- 30 g biscuits (amaretti biscuits)
- 2 tbsp almonds, chopped
- 2 tbsp raisins
- Cinnamon
- 1 tbsp lemon juice
- 1 pack of pudding powder, vanilla
- 1 liter of milk
- 80 g sugar
- 1 vanilla pod(s)
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes
For the vanilla sauce, prepare the custard powder with milk and sugar according to the package instructions, adding the vanilla seeds and stirring in. Allow to cool. Wash the apples. Use an apple corer to remove the core. Cut a small lid off each apple. For the filling, dice the marzipan mixture. Stir in the cranberries. Add the remaining filling ingredients and mix well. Season to taste. Place the apples in a greased baking dish. Fill with the prepared marzipan mixture, placing a small cap on top of each one. Sprinkle with chopped almonds. Distribute knobs of butter between the apples. Bake in a preheated oven at 200°C on the lowest rack for about 40 minutes. Remove from the oven. Toast the flaked almonds. Sprinkle the apples with flaked almonds and dust with powdered sugar. Serve the vanilla sauce with the baked apples.
