Baked cheese flatbreads Lebanese style

Ingredients for 12 servings:

  • 3 tbsp ghee, (Samna) melted
  • 6 flatbread(s), Arabic
  • 700 g cheese, halloumi or kasseri
  • 1 garlic clove(s)
  • 1 tbsp marjoram, fresh, finely chopped
  • 120 ml lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Kalladja – very aromatic

Preheat the oven to 180°C fan/200°C top and bottom heat. Finely grate the cheese and finely chop the garlic clove. Mix the cheese, garlic, marjoram, and lemon juice in a bowl. Halve the Arabic flatbread to make two half-moon pita parcels. Brush the inside of each parcel with samna and fill with the cheese mixture. Place on a baking sheet lined with baking paper and bake in the preheated oven for about 10 minutes until crispy. Optional: The bread can also be split to create two circles. Spread the cheese mixture on top and bake in the oven until the cheese is lightly browned. However, they are not as easy to eat and take up too much space in the oven. It is easier to shape the circles into parcels: first fold the bottom, then both sides, and then the top. Delicious for breakfast, dinner, or simply as a snack. If you need something really quick, we even pop them in the toaster!
