Baked peaches with amaretti crust

Ingredients for 4 servings:

  • 4 peach(s), ripe
  • 55 g butter (soft)
  • 40 g brown sugar
  • 100 g biscuits (amaretti, Italian almond macaroons)
  • 2 tbsp Amaretto
  • 125 ml cream, for serving
  • Sugar, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°C, wash the peaches, halve them, and remove the stones. Take 10g of the softened butter and grease a baking dish with it. Place the peaches in the baking dish with the cut side up. Cream the remaining 45g butter with the sugar until creamy. Crumble the amaretti biscuits (this works best in a plastic bag). Stir these crumbs into the butter/sugar mixture until well combined. Place the mixture evenly on each peach half. Place the dish in the oven and bake for about 25 minutes. In the meantime, whip the cream until stiff, add sugar, and refrigerate. When the peaches are ready, remove the dish and immediately spread the 2 tablespoons of amaretto evenly over the peaches. Serve immediately on dessert plates, two halves per person, with a dollop of whipped cream on the side. The peaches taste best served hot.
