Baked pork fillet

Ingredients for 4 servings:

  • 2 pork fillets
  • 4 tomatoes
  • 2 mozzarella
  • 2 packs of bacon
  • Pepper, from the mill
  • Salt
  • Oil, for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pork fillet into thumb-thick strips and wrap each one in a slice of bacon. It doesn’t need to be tied; it will hold well enough as it is. Briefly sear the fillet pieces on both sides in hot oil and place in a baking dish. Season the tops with salt and pepper (be careful with the salt, as the bacon is quite salty). Slice the tomatoes and mozzarella and arrange them on top of the fillet pieces. First the tomatoes, then the mozzarella. Preheat the oven to 180°C and bake the fillets until the mozzarella has melted (about 10 minutes). Don’t worry, the fillets won’t get tough. Enjoy! I’ll serve this with a simple potato gratin (I found it in the recipes here; it’s delicious) and a lamb’s lettuce salad with raspberry vinegar dressing (raspberry vinegar, oil, salt, pepper, and a little sugar). This dressing also tastes great with tomatoes.
