Baking: Spelled Flaxseed Bread

- 300 g Spelled flour type 630
- 100 g Spelled flour type 1050
- 1 tsp Salt
- 1 tsp Sugar
- 300 ml Lukewarm water
- 21 g Yeast fresh
- 3 tbsp Flaxseed crushed
- Put both flours, salt and sugar in a bowl and mix.
- Crumble the yeast in water and dissolve while stirring. Then add to the bowl. Knead everything together thoroughly. (Food processor)
- Cover and put in a warm place, let rise for about 1 hour.
- Then knead again, kneading in the linseed (reserve a little).
- Now put the dough in a loaf pan (25cm) and spray or brush lightly with water. Scatter the rest of the flaxseed on top.
- Place in the cold oven and let rise for another 30-60 minutes, until the volume has visibly increased and the dough has slightly reached the height of the pan. The length of time depends on the ambient temperature. If you have the option, you can set the oven to approx. 30 ° C. (Spray the walls of the oven with a little water.)
- Now set the oven to 180 ° C and bake the bread for about 30-40 minutes. (Time depends on how quickly the oven heats up and how light / dark you want the bread.)
- After baking, take the bread out of the mold and let it cool on a wooden board or wire rack.
