Ingredients for 4 servings:

  • 4 slice(s) farmer’s bread, thickly sliced
  • 500 g sausages, coarse and not boiled
  • 3 onions, finely chopped
  • 2 eggs
  • 3 tbsp parsley, finely chopped
  • 2 tbsp breadcrumbs
  • marjoram
  • oregano
  • some nutmeg, freshly grated
  • salt and pepper
  • 4 slices of Tilsiter
  • 8 gherkins

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Press the sausage meat out of the skin into a bowl. Add the onions, eggs, parsley, and breadcrumbs to the minced meat, season with salt, pepper, marjoram, oregano, and a pinch of nutmeg, and mix well. Spread the mixture onto the slices of bread, place the slices on a baking sheet, and bake in the oven at 200 degrees Celsius for about 20 minutes. Then place a slice of Tilsiter cheese on each slice of bread and bake for a further 3-4 minutes, until the cheese begins to melt. Arrange the bread slices on plates and garnish each with two gherkins. Serve with a Bamberg smoked beer or a dark Märzen.
