Ingredients for 6 servings:

  • 4 banana(s), ripe
  • 125 g biscuit(s), (egg biscuits)
  • 1 bag of pudding powder, vanilla
  • 650 ml milk
  • 85 g sugar
  • 2 egg whites

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and slice the bananas. In a baking dish, alternate layers of cookies and bananas. Cook the pudding according to the instructions – except with 650 ml milk and 75 g sugar. The pudding should still be runny so the cookies can soften. Preheat the oven to 200°C fan/convection oven. Pour the runny pudding over the bananas and cookies. Beat the egg whites with the remaining sugar until stiff peaks form, then spread over the pudding and smooth the surface. Bake in the oven for about 10-15 minutes, until the egg whites are a lovely golden yellow.
