Banana curd with sunflower sprouts

Ingredients for 1 servings:

  • 150 g low-fat curd cheese
  • 150 g natural yogurt, 1.8 or 3.8% fat
  • 1 m.-large banana(s), ripe
  • 4 tbsp sprouts (sunflower sprouts)
  • 2 pinches of vanilla, real, ground
  • possibly milk or water if the quark is too thick

Mash half of the banana in a bowl and mix with the quark and yogurt until smooth. Add the vanilla and mix in. Slice the other half of the banana and fold it in along with the sunflower sprouts (wash them thoroughly first!). Tip: If the quark is a bit too thick, you can mix it with a splash of milk or water until smooth. Note: Sunflower sprouts are easily grown from peeled and unroasted sunflower seeds. To do this, soak the sunflower seeds in plenty of water for 12 hours. Then drain the water and rinse the seeds thoroughly with water. The germination time is 2 days, and the sprouts must be rinsed twice a day. However, you shouldn’t let the sunflower seeds germinate for longer, as otherwise they will become bitter. Special sprouting jars or devices are suitable for sprouting. Sprouting jars can be purchased inexpensively at certain drugstores. You can also make a sprouting jar from a large screw-top jar. To do this, use a can opener for canned milk to poke a few holes in the screw cap and place the jar with the lid on at an angle to sprout. Sunflower seeds are high in fat (approx. 40%), two-thirds of which is high-quality unsaturated fatty acids. Sunflower seeds are also rich in protein (approx. 30%) and minerals. They contain particularly high levels of iron, phosphorus, and magnesium, as well as copper, manganese, potassium, calcium, zinc, iodine, and cobalt. Vitamin E is particularly important among the vitamins. Sunflower seeds also contain B vitamins, as well as vitamins A, D, and K. Germination increases the vitamin content of the seeds, and the other nutrients become more easily absorbed by the human body. Sunflower sprouts have a very fresh and nutty flavor.
