Banana jam with white peaches

Ingredients for 1 servings:

  • 670 g peach(s), white flesh
  • 250 g banana(s), weighed without peel
  • ½ orange(s)
  • 280 g gelling sugar, 1:3
  • 1 tbsp vanilla sugar (bourbon)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 20 minutes

Cut a cross into the peach and briefly dip it in boiling water. Peel, halve, and stone the fruit. Weigh out 600g of fruit flesh and cut into small pieces. Cut the banana into 1/2cm thick slices and juice the orange half. Mix the banana slices with the orange juice, peach pieces, and both types of sugar in a saucepan. Cover and let stand for about 2 hours. Slowly bring the fruit and sugar mixture to a boil while stirring, then simmer for about 5 minutes. Then roughly purée the jam, pour into prepared jars, and seal tightly. Then place the jars on their screw caps for 5 minutes and let cool upside down.
