Ingredients for 1 servings:

  • 225 g flour
  • ½ pack of baking powder
  • 1 pinch of salt
  • 100 g sugar
  • 90 ml vegetable oil, neutral
  • 100 ml milk
  • 1 large egg(s)
  • 2 bananas, overripe

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Makes 12-14 muffins

Preheat oven to 180°C (350°F). Line a muffin tin with paper baking cups. Mash the bananas. Combine the flour, baking powder, salt, and sugar. In another bowl, combine the oil, milk, and egg. Stir in the mashed banana. Pour the wet ingredients over the flour mixture and fold in briefly until no flour spots are visible. Spread the batter evenly in the tin and bake for about 25 minutes. Let cool.
