Banana – passion fruit – jam

Ingredients for 4 servings:

  • 750 g banana(s) (weighed without peel)
  • 2 tbsp lemon juice
  • 250 g passion fruit pulp (approx. 12 fruits)
  • 500 g gelling sugar

Peel and dice the bananas, and immediately toss with lemon juice to prevent them from turning brown. Peel the passion fruit and mix the pulp with the gelling sugar in a 2:1 ratio. Bring to a boil in a sufficiently large saucepan, stirring constantly. Boil for at least 2 minutes, stirring constantly, and then add the diced bananas. Bring to a boil repeatedly, then boil for 1 minute, stirring continuously. Test for settling. Pour the mixture into clean jars, secure lids, and turn upside down. This way, the jam will keep for a year. Tip: I made the jam with passion fruit juice instead of the 12 passion fruits. I also added kiwi pieces and a little more lemon juice to keep it from being too sweet. The jam has a beautiful color and tastes absolutely delicious!
