Ingredients for 4 servings:

  • 1 handful of basil
  • 100 g pine nuts, roasted, coarsely chopped
  • 80 g Parmesan, grated
  • 60 ml olive oil, very good
  • 1 pinch of sea salt
  • 1 garlic clove(s)
  • 1 pinch(s) of pepper
  • 1 dashes lemon juice

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Grind the basil in a mortar or chop it with a cleaver. Add the crushed pine nuts, garlic, and sea salt to the basil. Stir until a paste forms. Season to taste with a drop of lemon juice and a very fine grind of pepper, if desired. Finally, add good olive oil and the grated Parmesan cheese and stir until creamy. It goes well with almost any pasta.
