Ingredients for 5 servings:
- 500 g whole wheat spaghetti
- some olive oil
- 500 g minced meat, mixed
- 1 large zucchini
- 1 large onion(s)
- 3 thick garlic cloves
- 1 can tomatoes, chopped
- 500 g tomatoes, pureed
- 1 tbsp, heaped tomato paste
- 1 tbsp, heaped Ajvar, mild
- 1 tbsp, heaped Ajvar, hot
- 20 g blossom honey
- some salt and pepper
- chili flakes
- Paprika powder, sweet
- Paprika powder, hot
- curry powder
- ½ tsp marjoram
- ½ tsp rosemary
- ½ tsp thyme
- 1 tsp basil
- 1 tsp oregano
- 1 dashes lemon juice
- some Parmesan
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
Finely chop the zucchini, onions, and garlic. Heat the oil in a pan over high heat and fry the minced meat. As soon as the minced meat starts to brown slightly, add the zucchini and onions. 2 minutes later, add the garlic. As soon as everything is browned to your liking, add the ajvar and tomato paste, stir in, and fry for about a minute. Now it’s best to reduce the heat to medium-high and stir in the honey. Deglaze everything with the chopped and passata tomatoes. Now add the spices: salt, until salty enough for your taste, pepper, chili flakes if desired, plenty of sweet paprika (at least 2 level tablespoons), 1 tablespoon curry powder, 1-2 pinches of hot paprika, 1/2 teaspoon each of marjoram, rosemary, thyme, 1 teaspoon each of basil and oregano, and a squeeze of lemon juice. Now cook the pasta in salted water according to the package instructions until al dente. Meanwhile, let the sauce reduce. Drain the pasta, reserving some of the cooking water (about 150 ml) and add it to the sauce as liquid. Serve on plates and sprinkle with Parmesan cheese. You can use other pasta, use ground meat of your choice, and replace the zucchini with other vegetables, or omit it.
