Ingredients for 1 servings:

  • 500 g apples
  • 1 tbsp lemon juice
  • 2 tsp sugar
  • 1 tsp cinnamon
  • 100 g butter or margarine
  • 250 g sugar
  • 1 pinch of salt
  • 2 eggs
  • 300 g flour
  • 1 packet of vanilla pudding powder
  • 3 tsp baking powder
  • 125 g sour cream
  • some powdered sugar

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Wash the apples (peel if necessary), quarter them, and cut them into small pieces. I often use windfall apples for this, so I peel some apples and not some. Mix the lemon juice, 2 teaspoons of sugar, and the cinnamon into the apple pieces. In a large bowl, cream the butter or margarine until light and fluffy, gradually adding the sugar, salt, and eggs. Add the flour, pudding powder, and baking powder to the large bowl. Stir in the sour cream. Fold the apple pieces into the batter. Grease a loaf pan, tossing with breadcrumbs if desired. Fill the loaf pan with the batter and bake in the oven at 175 degrees Celsius (convection oven) for about 80-90 minutes. After about 60 minutes, cover the cake with aluminum foil. After baking, let it cool slightly and dust with powdered sugar. This apple bread tastes delicious. It can be eaten cold, but it’s also good when still lukewarm. We usually top it with a dollop of whipped cream or vanilla cream. Wrapped in aluminum foil, the apple bread can be stored for several days and still tastes moist. It’s also great for freezing. Once it’s completely cooled, we often warm it up a bit in the microwave. If you use smaller pans, the baking time is reduced to 30-35 minutes. Apple bread is also a favorite with kids.
